Fairy Cakes

The quickest, easiest and tastiest home-made Gluten Free Fairy cakes. The hard part is keeping up with demand!
Ingredients
Makes 12 cakes
- 150g caster sugar
- 150g butter
- 3 large eggs
- 1tsp vanilla extract
- 1tsp glycerine
- 150g gf self-raising flour ( I like Doves GF Flour)
- 1 tsp baking powder
Method
Prep 15 mins · Cook 15-20 mins
- Pre-heat the oven to 180˚C/gas mark 4. Place 12 muffin cases in a muffin tray.
- Place the sugar and butter into a large mixing bowl and cream until light and fluffy.
- Then add in the eggs, vanilla extract and glycerine and whisk until thick and creamy.(Remember to mix all the above ingredients well.)
- Next, sieve the flour and baking powder into the egg mixture and whisk well, but not too much!
- Divide the mixture between the muffin cases. Bake for 15 – 20 mins or until risen and golden.
- Remove the cakes from the tin and allow to cool on a wire rack. Decorate to your hearts desire!
