Fairy Cakes

The quick­est, easi­est and tasti­est home‐made Gluten Free Fairy cakes. The hard part is keep­ing up with demand!

Ingredients

Makes 12 cakes

  • 150g caster sugar
  • 150g butter
  • 3 large eggs
  • 1tsp vanilla extract
  • 1tsp glycerine
  • 150g gf self-raising flour ( I like Doves GF Flour)
  • 1 tsp baking powder

Method

Prep 15 mins · Cook 15-20 mins

  1. Pre-heat the oven to 180˚C/gas mark 4. Place 12 muffin cases in a muffin tray.
  2. Place the sugar and butter into a large mixing bowl and cream until light and fluffy.
  3. Then add in the eggs, vanilla extract and glycerine and whisk until thick and creamy.(Remember to mix all the above ingredients well.)
  4. Next, sieve the flour and baking powder into the egg mixture and whisk well, but not too much!
  5. Divide the mixture between the muffin cases. Bake for 15 – 20 mins or until risen and golden.
  6. Remove the cakes from the tin and allow to cool on a wire rack. Decorate to your hearts desire!
